I haven’t posted in a while. I’ve been pretty busy with work and school and whatnot but! I made time this past Saturday to make some Banana Pancakes from scratch!

1 1/2 Cups of Flour 2 1/4 Tablespoons of Sugar 2 1/2 Teaspoons of Baking Powder 1 Large over-ripe Banana 1 & 2 Tablespoons of Whole Milk 2 Eggs 3 Tablespoons of Meted Salted Butter A pinch of Salt
First, I put the Salt, Baking Powder, Flour, and Sugar into a bowl ~ probably could have used a smaller bowl though. Then I took a smaller bowl and smashed the banana into a sort of smooth – chunky-like texture. Not sure how to describe it actually but here’s a picture! The next step was to whisk the eggs into the banana. Once this is mixed well together add the milk. Before you add this mixture into the next, add the melted butter into the flour mixture that’s in the bigger bowl.
Once it is well blended then you can combine both bowls. The online recipe calls for folding the mixture together with a spatula however I slowly mixed with my egg beater because I oddly enough did not have a spatula. It turned out just as well though. Then I placed my batter on a buttered non-stick pan over medium heat.
Add butter to the pan to your liking. I LOVE butter so the more the merrier! But every one is different.
Here is my end result! I added a little bit of powdered sugar and banana slices for extra pizzaz and I think that really completed them! Along with some maple syrup for extra flavor and richness. They turned out really well and my boyfriend absolutely loved them! Which is an awesome plus because he does not like bananas whatsoever. The pancakes were sweet and rich. They had a very subtle banana taste that was not over bearing and extremely delicious. Let me know if you try this recipe and how it works for you! I would love to get your opinions.
